Cooking Class: Argentina
A part of the Around the World in 8 Cooking Classes Series
 
Come sample the unique food of Argentina whose genesis is in the South American lowlands of cattle and cowboys. Given the country's vast production of beef, red meat is an especially common part of the Argentine diet, yet it is a cosmopolitan cuisine with pockets of flavor from its traditional and idiosyncratic rural communities. You can enjoy your meat with chimichurri, a sauce of herbs, garlic and vinegar, after a snack of filled pastries (empanadas). Fresh vegetables are featured prominently, and spicing is simple to bring out the full flavor of the food. While not on our menu, Argentineans consume more pizza than Italians, and it is sometimes served on a pancake made of chickpea flour, called a faina.

About our instructor:
Chef Nicole Baverso of Pampas restaurant in Palo Alto will share her light and elegant food. “I create dishes based on traditional fare with a modern and creative presentation," she says. "The recipes I write focus on simplicity to bring out the natural flavors in food." 

Menu:
Corned Beef Feijoada (Soup) with Farofa
Coriander and Pink Pepper Grilled Skirt Steak with chimichurri and collard greens
Chilled Guava and Berry Soup with warm caramelized pineapple  


All meals are either dairy or use only kosher meat without dairy products. Substitutions will be discussed.
