Cooking Class: Armenia
A part of the Around the World in 8 Cooking Classes Series
 
If you drop into an Armenian kitchen you’ll find lamb, eggplant, mayonnaise, yogurt, and bread (lavash). Flavoring is subtle, to bring out the best of the freshest ingredients. You’ll find lots of fruit and nuts, even in the savory dishes, cracked wheat instead of rice, pickled vegetables in foods, and lots of stuffing. In addition to grape leaves, Armenians stuff cabbage leaves, Swiss chard leaves, eggplants, zucchini or squash, tomatoes, peppers, onions, potatoes, various meats, whole fish, apples, quince and even cantaloupe.

We'll be cooking:
Lavash bread with Feta
Khorovats – fire roasted vegetable stew
Armenian Rice pilaf
Khadaif – traditional Armenian dessert

All meals are either dairy or use only kosher meat without dairy products. Substitutions will be discussed.

About our instructor:
Our beloved Lusine Sargsyan of Haute Cuisine will tantalize your taste buds with this yummy food.
