Cooking Class: Yemen
A part of the Around the World in 8 Cooking Classes Series
 
Yemen is known for being home of the queen of Sheba in ancient times, and is rich in aromatic spices. It was once home to many Jews, including a king who converted to Judaism in the 6th century. Today's Yemenite Jews mostly live in Israel, but their cuisine still reflects their former native land. Jewish Yemenite cuisine is unique, but simple. Most common among Yemenite dishes are soups, Regel (leg in Hebrew) or chicken with unique spices such as Hawaij and Hilbea. There are also many varieties of breads, either baked or fried. Yemenite cuisine also includes BBQ beef or internal parts of lamb or goat, such as liver and lung.

Menu:
Chamin - white-bean beef stew soup

Marak regel - chicken soup
Kubaneh - Overnight bread
Malawach - fried dough
Jachnun - overnight rolled dough

All meals are either dairy or use only kosher meat without dairy products. Substitutions will be discussed.

About our instructor:
Ruby Yehoshua is the proud father of two and the oldest son of eight children. He loved to read books as a child but always made time to help his mother in the kitchen. Ruby is happiest when he is surrounded by his family and friends, sharing a Friday night Shabbat meal.
